A breakfast burrito is the perfect breakfast when the day continues outdoors: scrambled egg, crispy potatoes, bacon and cheese rolled in a warm tortilla. It keeps you full all morning, can be eaten with your hands and can be wrapped in foil and taken along on the hike.

    Method

    1. At home: whisk the eggs, milk, salt and pepper in a tub with a tight-fitting lid. Dice the potatoes and snip the bacon into pieces.
    2. Let the fire burn down to an even bed of embers and heat the pan.
    3. Fry the bacon until crispy. Lift it out and leave the fat in the pan.
    4. Fry the potato cubes in the bacon fat until golden, 6–8 minutes. Lift them out.
    5. Lower the heat by moving the pan to the edge of the embers. Pour in the eggs and stir slowly until they are creamy but set.
    6. Warm the tortillas one at a time in the dry pan, a few seconds per side, so they become soft.
    7. Divide the potatoes, egg, bacon and cheese between the middle of each tortilla.
    8. Fold in the short sides and roll up tightly.
    9. Put the burritos seam side down in the pan and fry for 1–2 minutes per side, until the outside is golden and the cheese has melted.

Tips for a burrito that holds together

    • Warm the tortilla first. A cold tortilla cracks when you roll it.
    • Not too much filling. About a fistful per burrito – otherwise it can't be rolled tightly.
    • Seam side down. Frying the burrito seam side down makes it hold together without cocktail sticks.

    Breakfast burrito with kids

    Vary the breakfast burrito

    • Vegetarian: swap the bacon for black beans, peppers and onion.
    • With sausage: fry sliced chorizo or falukorv instead of bacon.
    • Spicy: mix jalapeño and a teaspoon of paprika into the eggs.

    Common mistakes

    • The tortilla is cold – it cracks.
    • The eggs are fried over too high a heat – they become dry and rubbery.
    • Too much filling – the burrito can't be rolled.
    • The burrito isn't put in the pan seam side down – it opens up.
