Oven-Baked Tomato & Burrata Dip with Garlic Bread
A warm, creamy dip of roasted tomatoes and stracciatella – perfect for sharing.

This dip went viral on TikTok, and it's no wonder! Oven-baked tomato and burrata dip is a social dish that combines simple technique with deep flavor. When the tomatoes are roasted in plenty of olive oil, they burst and develop both sweetness and acidity. Garlic and herbs round off the flavor, and when stracciatella – burrata's creamy filling – is stirred into the hot tomato base, a smooth, almost fondue-like consistency is created.
This is a dish that works just as well as a starter as a snack, and is often the first thing to disappear from the table. Served straight from the dish together with crispy garlic bread, it becomes both rustic and inviting.
Here's how!
- Preheat the oven to 220°C (425°F), top and bottom heat.
- Place the tomatoes in a baking dish.
- Drizzle with the olive oil so the tomatoes are almost half covered.
- Add the garlic, oregano, parsley, chili flakes, salt and pepper.
- Mix gently.
- Roast in the oven for 20–30 minutes, until the tomatoes have burst and softened.

Garlic bread
Mix the butter, garlic, salt and parmesan.
Slice the baguette and spread with the butter.
Toast in the oven for 5–7 minutes until the bread is golden and crispy.
Assembly & Serving
- Take the tomatoes out of the oven.
- Stir the stracciatella directly into the hot tomato base.
- Top with parmesan and fresh basil.
- Serve immediately together with the garlic bread.
Tips!
- Stracciatella gives a more even creaminess than whole burrata.
- Serve straight from the baking dish for a rustic feel.
- Perfect as a "put it out and share" dish.
- Also pairs well with grilled meat or fish.
Want to vary the dish? You can:
- add grated lemon zest for a fresher flavor
- swap oregano for thyme or rosemary
- top with toasted pine nuts
- serve with focaccia instead of baguette
