This is a sandwich built on clear layers and balance. Crispy chicken meets a simple tomato sauce and melted cheese, while the green sauce adds acidity and freshness that cuts through the richness. Chicken
Halve the chicken breasts lengthwise and pound them lightly so they're an even thickness. Season with salt and pepper.
Prepare three bowls: flour in the first, beaten eggs in the second, and panko mixed with parmesan in the third.
Coat the chicken in flour, then egg, then finally panko/parmesan.
Fry the chicken in oil over medium heat until golden, crispy, and cooked through. Set aside.

Tomato Sauce
Gently sautΓ© the garlic in olive oil.
Add the crushed tomatoes and salt. Let simmer for 10β15 minutes until the sauce is rich but not too thin.

Green sauce
Mix the mayonnaise with pesto, garlic, and lemon.
Season with salt until the sauce is fresh but balanced.
Assembly
- Split the ciabatta rolls and toast them lightly until crispy.
- Spread a layer of tomato sauce on the bottom half.
- Add the chicken, top with extra tomato sauce and mozzarella.
- Broil quickly in the oven or under a lid until the cheese has melted.
- Dollop on the green sauce and add the top half of the bread.

Serve right away while the chicken is crispy and the cheese still melted. Goes well with a simple salad or oven-roasted potatoes on the side.

- Pound the chicken evenly for a crispier result and even cooking.
- Fry over medium heat so the breading doesn't burn before the chicken is done.
- The tomato sauce should be fairly thick β a sauce that's too thin makes the sandwich soggy.
- Perfect to cut in halves and serve as a weekend dish or street-food-inspired dinner.
