Creamy Curry Chicken Salad β Perfect for Outings and Summer Sandwiches

This chicken salad is creamy, sweet, and with a mild heat from the curry. It's perfect to bring on outings, for summer picnics, or when you want to dress up a baguette or sandwich. The combination of yoghurt, mayonnaise, mango chutney, and apple sauce gives a round, balanced flavor that's loved by both kids and adults.
Recipe:
Method
- Put the cooked chicken in a bowl.
- Add mayonnaise, yoghurt, curry powder, and paprika powder. Stir together until smooth.
- Fold in the bell pepper, red onion, leek, apple sauce, and mango chutney.
- Add the parsley and season with salt and pepper.
- Let the salad sit in the fridge for a while so the flavors can develop.
Serving tip
- Perfect on a baguette, flatbread, sandwich, or as a filling in a wrap.
- Excellent for picnics β the salad keeps well in a cooler bag.
- Also works as a buffet side or a quick lunch with a fresh salad.
